I’ve been to St. Barth five times in the last decade. I’ve done the beachfront magnums of rosé in St. Jean and the three-hour celebrity-watching dinners in Gustavia. But the truth is, St. Barth is at its absolute best when it’s chill. When it’s not "doing too much." After ten years of searching for the soul of the island (and helping clients plan their St. Barth itinerary), I finally found it in the quiet fishing village of Corossol. If you’ve been looking for the "Old St. Barth," the one that existed before the $400 sunbeds, you won’t find it on the main strip. You have to find Nyama, "Mom's House," in the heart of Corossol.
The Soul of Corossol: From Au Regal to Nyama

This is the backdrop for Nyama. It’s a village where life still moves at a local pace, where neighbors actually know each other, and where the 'see and be seen' culture of the rest of the island hasn't quite reached yet. It is in this exact environment that Tuti, Juju, and Clément have created their sanctuary.
If you’ve been coming to the island for years, you know the spot. Nyama sits in the heart of Corossol at the site of the legendary Au Regal, a neighborhood "cantine" where fishermen and locals would gather for a cold beer and a simple meal.




When the news broke that it was changing hands, the island held its breath. But the new owners—Tuti and Chef Clément—did something beautiful. In a nod to the island’s history, they still kept the original "Au Regal" sign hanging. It’s a quiet signal to locals and veteran visitors: The spirit of this place is still here.
Walking through the door, there is zero pretension. Nyama is an intimate sanctuary of only about 30 seats that perfectly captures the unique charm of Corossol. It feels like walking into a friend’s living room, if that friend had impeccable, eclectic bohemian taste.
An Eclectic, Bohemian Sanctuary





The first thing you'll notice is the ceiling: hundreds of colorful Asian lanterns flow from high wooden beams, intertwined with lush hanging greenery. The decor is a whimsical, mix-and-match affair. No two plates, glasses, or cups are the same.
The attention to detail is charmingly playful, our chopsticks were mismatched in the best way (think: one wrapped in flowers, the other in bunnies or Japanese anime). Even the chopstick holders were various designs or fun little shapes, like tiny pandas or cats waiting to hold your utensils. On our table, a soft light wrapped in green paper sat inside a glass bottle, gently fading in and out, while fresh flowers seemed to sprout from every corner.
The Trio Behind the Magic

Nyama is the realization of a dream by three individuals who are the definition of "island family."
First, there is Juju, a 22-year veteran of the restaurant industry and a ray of sunshine who has been a pillar of the St. Barth community for 11 years. Then there is the couple behind the flavors: Clément and Tuti. Clément, a culinary artisan, and Tuti, whose Vietnamese roots infuse every dish with love and authenticity.
The trio’s history is woven into the island's best establishments, from Tom Beach to Orega, but at Nyama, they’ve finally created a home of their own. Tuti, Juju, and Clement are quite possibly the warmest individuals I have ever met. Throughout the evening, the service was flawless. Everyone was incredibly attentive, and the chef even made a point to come out and say hello to the tables.
The energy in the room is palpable. My daughter, Sibby, is notoriously picky about who she smiles at or lets get close to her, but she couldn't take her eyes off Juju. Every time Juju walked by, Sibby would beam. she was clearly picking up on that warm, genuine energy that only the "OG" islanders seem to have. This isn't a place where you're just a reservation number; it’s a place where every regular is greeted with hugs and kisses like long-lost family. They were so welcoming that by the time the appetizers arrived, I felt like a lifelong friend of theirs.
A Masterclass in "Authentic" St. Barth Dining
The food at Nyama is, without exaggeration, the best I have had in St. Barth in a long time. Clement’s menu is a sophisticated, unpretentious blend of French technique and Asian flavors.

We started with a Tuna and Foie Gras pairing. I have never had this combination in my life, and it was a total revelation. The cool, clean silkiness of the fresh tuna was perfectly anchored by the rich, buttery decadence of the foie gras. It’s a "land and sea" pairing that I will be dreaming about for the next decade.


We followed it with the Vietnamese Pancake Salad, where the crispy pancake is chopped and tossed directly into the fresh greens. This was a masterclass in texture. Tuti’s roots shine here, the savory pancake is chopped up and tossed directly into a fresh, herb-forward salad, providing a crunch and depth that feels entirely new.


For the mains, you cannot miss Clement’s signature dishes:
- The Signature Chilean Sea Bass: Clément’s sweet and sour sauce is elevated and refined. The bass was buttery and flaked at the touch of a fork, with the sauce providing a bright, acidic contrast that cut through the richness beautifully. This was by far my favorite and one of the most incredible dishes I've ever had on St. Barth...the citrusy sweet and sour combo was tantalizing for the taste buds.
- The Duck with Oyster Mushrooms: Deeply savory and earthy. The mushrooms were succulent, soaking up the juices from the perfectly rendered duck.


For a truly interactive meal, the "Grill for Two" is a must. A large plate of marinated meats (beef, shrimp, and chicken) is presented alongside a bowl of fresh vegetables and vermicelli noodles. They bring a hot plate to your table, and you grill the meats to your liking, filling the air with incredible aromas. You then take rice paper, build your own "spring roll," and dip it into their signature sauces. It was fun, fresh, and flavors were spot on.


As a self-proclaimed dessert obsessive, the Pain Perdu is mandatory. It’s a thick, caramelized French toast topped with jam, crunchy pistachios, and a light-as-air lemon mousse. We also shared the Banana Spring Rolls, served warm with rich chocolate, the ultimate comfort food.
A Toast to Tradition: The Secret House Rum
To end the night, we were offered a glass of house-made Passion Fruit Rum. Offering a Rhum Arrangé (infused rum) as a digestif is a storied St. Barth tradition. It’s usually a secret recipe made by steeping local fruits and spices in agricultural rum for months.
While many trendier spots have abandoned this tradition, Nyama keeps it alive. I won't give away the secret of exactly where this specific blend comes from (some secrets are meant to be kept for the locals), but I will say this: the passion fruit blend they serve recently won a Silver Medal at the 2025 Concours Général Agricole in Paris. After one sip, you’ll understand why it’s considered the best on the island.

The Most Baby-Friendly Restaurant in St. Barth
Traveling to St. Barth with a baby can be a stress test. But Nyama is a sanctuary. Because Clément and Tuti are parents themselves, they’ve built a restaurant that understands the needs of a family. They are even closed on weekends to prioritize their own family life, a refreshing rarity in a 24/7 tourist destination. This attitude makes Nyama their home, not just a business.
My daughter was mesmerized by the glowing Asian lanterns hanging from the ceiling. The staff immediately brought out little gadgets for her to play with. The kitchen even whipped up custom grilled chicken skewers and rice for her, and the music volume was the perfect "chill" level, enough to keep a great vibe for the adults without overwhelming a toddler.
St. Barth doesn't need to be "more." It doesn't need more sparklers or more velvet ropes. It needs more places like Nyama. It is a reminder that the best of the island isn't something you can buy with a VIP table, it’s a feeling of being home. If you want to experience Corossol like a local, skip the glitz for one night. Look for the old Au Regal sign, give Juju a hug, and let Clément and Tuti cook for you.
