Xiao Long Bao

The highly-talked about “soup dumplings” are the first things to try in the Shanghai food scene. The gelatin-rich dumpling contains a soup and pork filling and is enjoyed by dipping into vinegar. It can either be consumed by nibbling off a corner of the dough and sucking out the soup or by downing the whole thing in one go.

Also known as Scallion Pancakes. These are hands down, one of the best breakfast treats in the Shanghai food scene. The pancake is filled with scallions, fat pork and oil, then flattened and pan-fried for a flaky layer.

Peking duck is one of China’s most famous dishes for good reason. Specially-bred and fattened ducks are glazed and hung in a wood fire to roast until the browned skin is crisp and the meat succulent. It is served with a sweet-and-sour honey sauce or a light soy sauce, made from Pekin breed and dipped in fermented bean sauce.
